After a busy season of holiday festivities and parties, it’s normal to want to get back on track and incorporate more healthy recipes into your diet. Amid the holiday and New Year’s rush, finding time for homemade dishes can be a challenge. We’ve put together a warm winter dinner recipe that’ll keep you fueled for all of the winter get-togethers and at-home dinners ahead. Read on!

Porterhouse Steak with Rosemary Potatoes

Ingredients (Steak):

• ½ tbsp sea salt

• ½ tbsp black pepper

• 16 oz NY Strip Porterhouse, or Rib Eye

• 2 tbsp olive oil

• 2 tbsp unsalted butter or butter alternative

• 1 sprig fresh rosemarys

Ingredients (Potatoes):

• 2 idaho potatoes

• 2 tbsp olive oil

• 1 tsp sea salt

• 2 minced garlic cloves

• 1 tbsp crushed fresh rosemary

Instructions:

1. Preheat oven to 450°F and bring the steak to room temperature.

2. Heat the cast iron in the oven for 15 minutes.

3. Pat the steak dry. Mix together in a small bowl the spice rub of sea salt, black pepper, and garlic powder. Massage this generously into the meat. Drizzle olive oil onto the meat and rub into the meat. Let this rest again while the cast iron heats up.

4. In the meantime, cut the potatoes into ½-inch chunks. Next, toss them together with olive oil, sea salt, minced garlic, and crushed rosemary. Afterward, spread the seasoned potatoes onto a baking sheet and place it in the oven to cook for 30 minutes or until they turn golden brown, remembering to flip them halfway through. Meanwhile, you can keep the potatoes in the oven while the steak is cooking.

5. When the cast iron is ready, take it out and turn the stove to high heat. Melt 2 tablespoons of unsalted butter in the pan and add a sprig of rosemary. The pan should be screaming hot.

6. Add the steak to the pan and let sear 2 minutes on both sides, for about an inch thick NY Strip. Take out the sprig of rosemary.

7. Flip the steak back to the first side and transfer this to the oven to cook at 450°F. Cook this for 2.5-4 minutes per side depending on how you like it and how thick your steak is. 2.5 minutes would be medium rare for an inch thick steak.

8. Once the steak is done, pull it out of the oven and let it rest. After the steak has rested, cover it on a cutting board for at least 10 minutes for the juices to settle.

Ingredients:

  • 2 oz. 100% pomegranate juice
  • 2 oz. kombucha
  • 1 oz. freshly squeezed orange juice
  • 1/2 oz. fresh lime juice
  • 2 oz. sparkling water or seltzer
  • Ice for serving

Optional garnishes:

  • Pomegranate arils
  • Lime or apple
  • Frozen cranberries
  • Fresh mint or fresh rosemary

Instructions:

  1. In a large pitcher, stir together the juices.
  2. Slowly pour in the kombucha and sparkling water.
  3. Stir gently (don’t stir too fast or you’ll lose some of your bubbles).
  4. Option to add stevia drops to taste.
  5. Pour immediately into glasses with ice and garnished with fruit of your choice.

Jay Bhakta has always believed in being active, playing sports in high school and building exercise into his college years and beyond. Born and raised in Guthrie and a graduate of the University of Oklahoma, Jay was living in Cleveland County when he realized the area was missing something. “There were no exercise options that provided real-time feedback, how hard you were working or if the activity needed to be increased or lowered in order to be safe and effective,” he said.

Polling friends and family from all different stages of life about what the area needed, Jay kept hearing the same answer: Orangetheory Fitness (OTF). “I just kept hearing Orangetheory not just from locals, but those who lived in other states, so I began to do research, talked with corporate and we entered into an agreement in February 2016.” Jay’s franchise at 825 SW 19th in Moore opened in January 2017, the second in the state behind the Edmond location.

OTF is a science-backed, technology-tracked, coach-inspired group workout designed to produce results from the inside out. “It is a workout for all fitness levels and ages because our workouts are designed to be based on your own exertion level using your heart rate and our real-time heart rate monitoring technology with instant feedback,” said Jay. “But most importantly, Orangetheory is a fitness community that is warm, welcoming, and encouraging.”

The real-time heart rate tracking at OTF—with the option to wear a monitor on the chest, arm/bicep or attached to an Apple Watch band—allows you to see how hard your heart is working both during your workouts and during periods of rest.

“Periodically looking at a wearable is not the most effective way to accomplish real-time heart rate monitoring. Our state-of-the-art studios have two big monitors and tracking tablets on every piece of equipment to make heart rate monitoring effortless,” he said.

Jay gets joy from all aspects of his business, especially when it comes to member success stories. “I always love to hear the non-scale victories our amazing members share, like improved energy levels, increased strength, or better mental health.” He also loves seeing the families that come in together— like a teenager or high school athlete with a parent or family member. “Even if it is just for that one hour a day, they are coming together and offering accountability and support to one another.”

On the books for 2024 is the 8-Week Transformation Challenge, complete with a cash prize for the winner. Participants must complete a minimum of three workouts a week for six of the eight weeks. DPC eliminates the insurance intermediary, simplifying the doctor-patient relationship through a reasonable monthly fee. This approach offers extended visits, no copays, unlimited visits or contacts as needed, and cost savings by avoiding insurance complexities. It places the focus squarely on the patient and fosters a mutually beneficial relationship.

Her practice will encompass two facets. One part will involve caring for seniors in assisted living homes through Medicare. The other side will feature a DPC private practice, allowing Dr. Nguyen to provide each enrolled patient the time and commitment they genuinely deserve. She will operate out of Prairie Garden Medical, a multi-faceted clinic with a range of providers and services, including lab work, x-rays, orthopedic surgery, physical therapy, hearing tests, psychiatry, and a pharmacy offering comprehensive services, including compounding.

Dr. Nguyen firmly believes that the DPC model, when implemented effectively, empowers patients and physicians to take charge of their healthcare discussions and decisions. She is dedicated to bringing this model to her patients at Prairie Garden Medical, where she will listen attentively and provide the best possible care.

Our Members assembled 43,000 individual-sized hygiene kits in 2022 that were donated back to the homeless, food insecure, children, foster families, the incarcerated, and other needs in our community. Wings is on the move and out in the community serving our non-profit partners in their spaces. Our Members stock food pantry shelves, sort baby clothes, restock classroom supplies, sanitize and put away gym equipment, and more. No time is better spent than serving others.

People use computers and technology every day in our growing and ever-changing world. This program teaches our Members a safe way to use devices and technology. Through safe apps, research, keyboarding, photography, and reels our Members are keeping up with the world that surrounds them.
